Joyva Sesame Tahini Minestrone Soup

Servings: 4
Prep Time: 20 minutes
1 tsp. olive oil
2 cloves garlic, minced
1 c. onion, diced
1/2 c. celery, diced
1/2 c. carrot, diced
1 tsp. salt
1 tsp. oregano
I tsp. Italian seasoning
8 oz. vegetable broth
1 16-oz. can diced tomatoes
1 16-oz. can garbanzo beans,
  drained and rinsed
1 8-oz. can kidney beans,
  drained and rinsed
4 oz. Joyva Sesame Tahini
4 oz. shredded parmesan cheese.

Heat a four-quart pot and add olive oil, minced garlic, onion, celery and carrots. Saute for five minutes. Add salt, oregano, and Italian seasoning. Cook two more minutes, stirring constantly. Add vegetable stock, tomatoes, kidney beans and garbanzo beans. Bring to a boil. Reduce to a simmer for twenty minutes. Divide into four bowls. Drizzle each bowl with 1 oz. Joyva Sesame Tahini and garnish with shredded parmesan cheese.
